Anticipation of a Culinary Sort



I made this last night but I forgot to post about it, although I did manage to snap a pic on my cellocam. Chicken, minced garlic & shallots, and baby bella shrooms sautéed in olive oil and butter; Ruffino Lumina Pinot Grigio and a bit of half & half were added to form a creamy sauce. This perched atop a cloud of fluffy red bliss & garlic mashed potatoes - butter and half & half galore mixed in - with an unreasonable amount of diced scallions within and without. Quite possibly the best smashed spuds I've made.

Rarely have I been so psyched for leftovers. I can't wait to get home. Good thing my commute is only 2.4 minutes long!

Jeeze Louise....this dish is totally my speed, as I have attempted same in the past....looks awesome...I'll bet those baby bellas make the dish. Perhaps next time top with a little crispy pancetta? Methinks that would be a nice complement?
