'Za

I spent the majority of the day yesterday planning, prepping, and cooking six different pizza pies for a Presidents Day dinner bash. And it was awesome! Although making pizza isn't that complicated, I also felt the most accomplished after than any other meal I've made. This is because of the amount of food, the timing and everything involved in prepping the various ingredients. It was a lovely affair with a daecent crowd. The menu (homemade dough, btw - best yet!):

  1. Pepperoni & bacon
  2. Veggie (onion, peppers, shrooms)
  3. Sweet Italian sausage, onion, and peppers
  4. "Green" pizza - spinach w/roasted garlic and parmesan
  5. Prosciutto, artichoke hearts and olives
  6. Carmelized red onions, fresh mozzarella, and sundried tomatoes in a balsamic vinegar reduction
Pretty treatful, really. Also, lots of vino.

The best part is that I got to wear my new chef's coat - this is a pretty legit coat, branded with the Southern Comfort logo, as it was one of many trashed items left in the hall by the alcohol promotion company who stores their stuff next to our office. I believe there may be some pics floating around the internets soon...

I think the coat increases cooking efficiency by 50%, and that's a conservative estimate. My timing was perfect, my reduction reduced, and the dough was incredibly cooperative.

Possible career change?

Oh wait...I already am second only to the unbeatable Gipper, so basically, essentially, accurately, I'm #1.

perhaps you have found your calling. did you ever read kitchen confidential? i thought that book accurately described both the glory-filled and glory-less aspects of working in the restaurant biz.

Yeah I've read Kitchen Confidential and A Cook's Tour.

I actually really do enjoy it, although it's a tough business.

Meaning: I enjoy cooking. Professional cooking is a tough business, from what I understand, not from what I know.

You might, anon., but it was an embargo on all but the most extenuating situations.

Plus, as Scoreboard Administrator I am assuming certain executive powers.
